wrong kind of cheese, Natuzzo.Not all cheese melt like that... sometimes when you want to bake something and have cheese melt on top you need a cheese more pasta soffice that is... kinda like provola.If you want to put parmiggiano, instead, you have to put curls of butter on top because if the cheese is dry it will not melt. the butter will help.
